Rollercoaster, Barbeque Cookies, and Sushi

One of the highlights was when I made barbeque cookies. It was too hot to cook inside so Jesselyn and I tried to experiment. I will put the recipe below. I also got to take Korrie and Kassie Tyers to West Edmonton Mall to go on the rollercoaster...and I got to eat sushi for the very first time. I loved it!! I was told that Winnipeg has a couple of good sushi places that I can try out when I move there in a couple of weeks.
BARBEQUE COOKIES
INGREDIENTS
1 cup butter
1 1/2 cups white sugar
2 eggs
2 3/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
2 teaspoons vanilla
1/2 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon
DIRECTIONS
Make a cookie tray out of two layers of tin foil. Fold the outward edges up to create a rim for the tin-foil cookie sheet. Spray tin foil cookie sheet with Pam.Preheat barbeque 400 degrees F. In a medium bowl, cream together the butter and 1 1/2 cups sugar. Stir in the eggs and vanilla. Sift together the flour, baking soda, cream of tartar, and salt; stir into the creamed mixture until well blended. In a small bowl, stir together the 2 tablespoons of sugar, and the cinnamon. Roll dough into 1" balls and then roll the balls in the cinnamon-sugar. Place them onto an unprepared cookie sheet, two inches apart. Gently push the cookie balls down with a fork.Bake for 6-8 minutes in the barbeque on the top rack. Edges should be slightly brown. Remove from sheets to cool on wire racks. Eat...yummy!!
